Beet, Feta and Walnut salad with a Red Wine Vinaigrette

Ingredients

  • Spring mix salad mixture
  • Walnuts, chopped
  • Feta reduced-fat cheese, crumbled
  • Red onion, sliced
  • Beets canned, sliced
  • Red wine vinegar
  • Balsamic vinegar
  • Olive oil
  • Fresh lemon
  • Garlic powder, salt and pepper to taste

Instructions

For the Vinaigrette

  • In a small bowl using a whisk or in a shaker bottle add red wine vinegar, balsamic vinegar, olive oil, 1/2 fresh squeezed lemon, garlic powder, salt and pepper. Add a little honey if you like a sweeter vinaigrette. Whisk or shake well.

To Serve

  • Place spring mix, walnuts, feta, red onion and beets on a platter.
  • Drizzle with vinaigrette and serve!
