- 1 1/2 sticks Butter, softened
- 3/4 cup Brown sugar
- 1/2 cup Sugar
- 1 large Egg, plus 1 egg yolk
- 1 tsp Vanilla extract
- 1 1/2 cups All purpose flour
- 1 1/2 tsp Baking powder
- 1 1/2 tsp Baking soda
- 1/4 tsp Salt
- 1 1/2 tsp Ground cinnamon
- 1 1/2 cup Dark chocolate chips
- 1 1/2 cup Old fashioned rolled oats
- 1 cup Unsweetened shredded coconut flakes
- 1 cup Nuts, chopped (I've use walnuts and pecans in the past)
Heat the oven to 350 degrees.
In a stand mixer, mix butter on medium speed until smooth and creamy. Add in the sugars and mix well for 2 minutes, scraping down the sides of the bowl if necessary.
Add the egg and egg yolk and beat well.
Beat in the vanilla.
In a separate bowl, sift the flour, baking powder, baking soda and cinnamon together.
Slowly add the flour mixture to the butter mixture and mix until just combined.
Stir in the chocolate chips, oats, coconut and nuts.
Scoop out the cookie dough ( I used a small melon ball) and place on a baking sheet sprayed with cooking spray or parchment paper.
Bake in the oven for 12-15 minutes, until the edges are lightly browned. Keep a watch on them as not to overcook. They will continue to cook on the cookie sheet as they cool. Remove and store in a sealed container on the counter-top.
