Ingredients
8ozPasta (I used Casarecce)
4linksSpicy Italian sausage, casings removed
1smallOnion, diced
4-5clovesGarlic, finely minced
8-10Button mushrooms, sliced
1smallBunch of broccoli, chopped
2handfulsSpinach
2smallRoma tomatoes, diced
1cupPasta water
Instructions
In a large saucepan, cook pasta according to directions on package. Before draining, save 1 cup of pasta water and set aside
In a large saute pan, cook Italian sausages (if you are using sausage links, crumble and break them up as you're cooking). Add onions and garlic and stir well.
Add mushrooms and broccoli and cook until the vegetables are getting tender.
Add spinach and tomatoes pouring the hot pasta water over the top to slightly wilt the spinach and tomatoes. Stir in the al dente pasta and serve immediately.
Add any spices, salt and pepper to your taste. Top the dish with Parmesan and crushed red pepper.
