Easy Pasta with Italian Sausage and Vegetables

Ingredients

  • 8 oz Pasta (I used Casarecce)
  • 4 links Spicy Italian sausage, casings removed
  • 1 small Onion, diced
  • 4-5 cloves Garlic, finely minced
  • 8-10 Button mushrooms, sliced
  • 1 small Bunch of broccoli, chopped
  • 2 handfuls Spinach
  • 2 small Roma tomatoes, diced
  • 1 cup Pasta water

Instructions

  • In a large saucepan, cook pasta according to directions on package. Before draining, save 1 cup of pasta water and set aside
  • In a large saute pan, cook Italian sausages (if you are using sausage links, crumble and break them up as you're cooking). Add onions and garlic and stir well.
  • Add mushrooms and broccoli and cook until the vegetables are getting tender.
  • Add spinach and tomatoes pouring the hot pasta water over the top to slightly wilt the spinach and tomatoes. Stir in the al dente pasta and serve immediately.
  • Add any spices, salt and pepper to your taste. Top the dish with Parmesan and crushed red pepper.
