Dark Chocolate Pumpkin Mini Muffins

Ingredients

  • 1 box Dark Chocolate Fudge Cake Mix
  • 1 15 oz Pumpkin (I used Libby's 100% pure, organic)

Instructions

  • Preheat oven to 350 degrees.
  • With a mixer, mix the TWO ingredients - cake mix and pumpkin on low to medium speed for about 2 minutes.
  • *Do not add the ingredients suggested on the cake mix box.*
  • Spray 2 mini muffin pans with cooking spray.
  • Using a melon baller, fill the mini muffin pans about 3/4 full. I made 36 mini muffins. I sprinkled 3-4 dark chocolate chips on half of mine.
  • Bake at 350 degrees for 12-15 minutes, checking with an inserted toothpick to make sure you don't overcook them.
