This pretty salad with sliced pickled beets, feta, walnuts and red onions with a red wine vinaigrette is very tasty and COLORFUL!
We’ve started eating beets. Yea, I know, you probably either love them or hate them. For many years I definitely fell into the hate category. I’ve never given them a chance. I always thought I didn’t like them but actually I had never tried them.
Now, I’m in love!
They just keep showing up on our table. Thank goodness my husband, Paul, will try anything. He actually didn’t think he was much of a beet fan either. Every time we discussed them, he always told me how much his mother loved beets. I just didn’t get beats- Of all the wonderful foods available, why would anyone choose beets? Now I completely understand. Unfortunately I never met his mother since she had already passed away when I met him. Now every time we have beets, I think of her.
At the first of the year we were dining at a restaurant we had never been to and for some reason I was looking at the menu and saw a side dish that caught my eye -Roasted Beets with Feta. I hesitantly pointed it out and Paul immediately said, “yea, I was thinking about that too“. I’m not sure if the allure was the feta (which we love) but I definitely had to try it. It was served warm and the feta was all ‘melt-y‘ on top. It was good!
So, since then we’ve kept beets on hand.
This recipe is perfect for canned or jarred pickled beets – 5 minutes and you’ve got a perfect side salad or a main dish, meatless salad.
Of course, you could use fresh, roasted beets and it would be delicious. By using fresh beets, you can control the amount of sugar. When purchasing canned or jarred pickled beets, I always like to check the sugar content. Some brands are high in sugar.
Beet, Feta and Walnut salad with a Red Wine Vinaigrette
Ingredients
- Spring mix salad mixture
- Walnuts, chopped
- Feta reduced-fat cheese, crumbled
- Red onion, sliced
- Beets canned, sliced
- Red wine vinegar
- Balsamic vinegar
- Olive oil
- Fresh lemon
- Garlic powder, salt and pepper to taste
Instructions
For the Vinaigrette
- In a small bowl using a whisk or in a shaker bottle add red wine vinegar, balsamic vinegar, olive oil, 1/2 fresh squeezed lemon, garlic powder, salt and pepper. Add a little honey if you like a sweeter vinaigrette. Whisk or shake well.
To Serve
- Place spring mix, walnuts, feta, red onion and beets on a platter.
- Drizzle with vinaigrette and serve!
