I think I could change this blog to a “Chocoholic” website.  It seems I’m always posting chocolate recipes.  I’m addicted.
I’m not a huge dessert fan, but when I do eat sweets, chocolate is the way to go.

These are the perfect size.  Just right for a little treat without blowing all your calories.  But I’ll admit I did eat more than one….they’re SO good.

I made these for New Year’s Eve.  We were planning on sharing some of them.  But instead we kept them and ate them all!  🙂

These Dark Chocolate Turtles are really easy to make.  The hardest part for me was finding the caramels.  Believe it or not, the caramels I used came from Dollar Tree.  They were in a package of 15 and I used 2 packages.

The number of servings this recipe makes depends on how big you make them.  I got 15 from the recipe below.

This is a great combination of sweet and salty.  Adding the sea salt just really changes the entire flavor of the Turtles.  You can’t really go wrong with these Chocolate Turtles.  And in my opinion you cant go wrong with dark chocolate.
Chocolate really only comes in one flavor – DARK!

No Bake Dessert!

Make sure you use SOFT caramels.  You want these to be smooth and creamy.
Also, toasting the pecans gives them a more rich, deeper flavor.  I realize this is an extra step, but I always toast mine in a saute pan on top of the stove.  It’s quicker than roasting the pecans in the oven and you don’t have to heat your oven.

Ingredients

  • 1 1/2 cup Pecans, chopped and toasted
  • 25-30 Caramels
  • 2 tbs Water or milk
  • 1 cup Dark chocolate, melted
  • Sea salt or Kosher salt

Instructions

  • Place chopped pecans in a saute pan over medium to slow heat on stove top. Stir often and 'toast' til browned.
  • On a large baking sheet covered with parchment paper make small piles of chopped pecans (about 1 tbs).
  • Unwrap the caramels and place in a small saucepan with 2 tbs water or milk. Melt on a low setting, stirring often until thoroughly melted.
  • Melt chocolate in microwave safe bowl at 20 second intervals, stirring as you go.
  • While the caramel is still warm place a spoonful over chopped pecans, thoroughly covering the pecans.
  • Add spoonfuls of melted chocolate over the top leaving a border of caramel.
  • Finally sprinkle sea salt or course Kosher salt over the top. Let cool.

These would make a great, homemade treat to give as a gift!
