A different take on the old, boring meatloaf recipe – Italian Meatloaf!

 

This is not your usual home-style meatloaf.  This is an easy and delicious recipe to put together and throw in the oven.  Let it cook while you are making a couple of sides to go with it.

We served ours with a baked potato and green beans.

Ingredients

Italian Meatloaf Ingredients

  • 1/2 lb Ground beef
  • 1/2 lb Ground turkey
  • 1/2 lb Italian spicy turkey sausages, casings removed
  • 1/2 large Onion, diced
  • 4 cloves Garlic, finely diced
  • 1 Egg
  • 1/2 cup Italian bread crumbs
  • 1 8 oz Tomato sauce- save part of the can for topping meatloaf. (can use ketchup instead)
  • Tomato paste
  • Add any combination of seasonings you like: salt, black pepper, crushed red pepper, oregano, Italian seasoning, basil, rosemary, thyme. You could also just add a packet of McCormick spaghetti seasoning.

Topping for Meatloaf

  • 1/4 cup Parmesean cheese
  • 1/4 cup Mozzarella cheese
  • Parsley and oregano

Instructions

  • Preheat oven to 375 degrees.
  • In a large mixing bowl add all Meatloaf ingredients and mix with hands. Do not over-mix or the Meatloaf will be tough.
  • Place in metal or glass meatloaf pan, drizzle a little tomato paste over top (I always keep a tube of tomato paste in the frig. You can use just what you need and not have to open a can), and cook for 50 minutes.
  • Remove from oven and add Meatloaf Toppings. Preheat oven to 400 degrees and cook another 10 minutes. Let cook for 5-10 minutes.

Since this recipe only calls for 1/2 lb of three different meats, I used the remainder of the meats the next night and made Chili.

You could also add diced green pepper to the meatloaf ingredients -I’m not a fan, so I omitted it.

Another idea is to use a jar of Pizza Sauce in place of the tomato sauce.   Mix 8-10 ounces in with the meatloaf ingredients and then also add more of the pizza sauce to the top of the meatloaf!
