The Lost Wallet

He slowly revealed the package with a huge smile on his face – a ziploc bag containing his slightly moldy and damp wallet having spent the tough Illinois winter outside.  The sticky note attached simply read, “We found this while walking near the United Township soccer fields in East Moline, Illinois.”  No name, no return address.

In something less than two months, we find ourselves, our families, our communities, our nation and even the world in uncharted territory.

In that short amount of time we have been thrown into something so foreign to us that we are all having a lot of difficulty coping. We are in self quarantine, practicing social distancing – probably the catch phrase of the century,  wearing face protection, intentionally crossing the street to avoid oncoming neighbors and even dear friends and adjusting to so many more things we never imagined. It’s time to grill!

I love being able to hand off the cooking to my husband.  He does all the grilling in our house – I stay away from the grill.  I’m usually still in charge of the prep work but he does the cooking.  And the cleanup is so much simpler than dirtying up 2-3 pans  in the kitchen.  Most of the time when we light the grill, we grill the entire meal.  Or we grill extra meat to use for another meal later in the week.
This Cilantro Grilled Chicken is perfect for a lunch meal sliced on a salad.

Grits are not just for breakfast.  They can be used in savory dishes also.  In fact I prefer them for a dinner meal instead of a breakfast meal.

“Grits are a Southern dish”, you say.  I’m about as Southern as you can get and we didn’t eat grits growing up.  Not sure why.  In fact I only ate grits for the first time at a restaurant a few years ago when I ordered a dish similar to this recipe- minus the sauteed spinach. We often eat this sauteed spinach as a side dish with our dinner meal.  It’s quick, easy and a ‘super food’.  I don’t know about y’all but I’ll take all the super foods I can get! In Home Date Night

We thought if we could have just one thing that we’ve really missed what would it be? We decided it would be pizza. So we started looking at the different pizza chains a few days ago and dreaming about pizza – imagine that.

During this time of uncertainty and time of seeing thousands of our fellow citizens stricken with COVID-19, many of whom have unfortunately perished, we, the citizens of the greatest nation to ever exist, have done and are doing all we can to defeat this unseen denizen – and at great sacrifice, to say the least.

We’ve been asked to self-quarantine.  We’ve been asked to stay at home.  We’ve been told to social distance. We’ve lost countless jobs and businesses.  We’ve lost national treasure, never to be restored.  But we do it because we are all in this together.  Our lives have been turned upside down and what we knew as normal is to be no more.  Our world will forever be changed by this pandemic.

With everything that’s going on with our self quarantine and stay at home instructions, we decided to try to normalize just one tiny part of our lives – just a little something to take our minds away from the chaos and tragedy surrounding us every day.
