This Iced Coffee is perfect for a quick to-go breakfast in the morning or a pick-me-up in the afternoon.

Lately we’ve been drinking more coffee.  I’ve always been a morning only coffee drinker but I’ve decided a cup in the afternoon hits the spot.  We like to sit on the front porch and instead of having afternoon tea, it’s afternoon coffee. 

With the weather getting warmer (or at least trying to get warmer) we’ve been experimenting with iced coffees.  This recipe is really so simple it’s not even a recipe.  But there are SO many options to change it up.

          • chocolate syrup
          • caramel sauce
          • vanilla or chocolate protein powder
          • PB2 or chocolate PB2 (powdered peanut butter)
          • vanilla
          • cinnamon
          • whipped cream
          • soy milk
          • almond milk
          • coconut milk
          • skim milk

You get the idea.  Think coffee shop without the steep price.

If you haven’t tried PB2, give it a try.  It is a powdered peanut butter that can be found at most grocery stores now.  Or we’ve ordered ours on Amazon also. PB2 comes in regular peanut butter or chocolate peanut butter.  It is pretty versatile and has many uses besides the obvious – reconstitute it with water and use it like peanut butter.  It has 85% less calories than traditional peanut butter.  So if you are watching your calories and love peanut butter (like I do), you can still have the taste of peanut butter with few calories and fat.
Here are a few other ideas for using PB2:

          • add to non-fat, plain yogurt
          • add to oatmeal or overnight oats
          • add to smoothies
          • mix with honey
          • make energy bites
          • mix with pancakes

Our coffee shops are closed right now because of Covid-19.  So, we have to be more inventive with our food and drinks at home.  Yes, we do have a few drive thru windows open.  But, we also have a ‘Stay at Home’ policy in place that we are trying to closely adhere to.

Iced Coffee

Use brewed cold coffee, milk and add in your favorite flavors

Equipment

  • Blender or shaker

Ingredients

  • 1 cup brewed coffee, cold
  • 1 cup soy milk
  • 1/2 tsp vanilla
  • 2 tbs chocolate syrup
  • 2 tbs PB2, regular or chocolate
  • 2 ice cubes

Instructions

  • Brew coffee beforehand, let cool and place in the refrigerator.
  • Place all ingredients in blender or shaker and mix.

  • When using a blender and adding the few ice cubes, it doesn't make it a creamy drink (like a smoothie). There will be a very faint texture of shaved ice. You can still serve it over ice or drink it as is.
