This is just a simple cake mix and container of store-bought icing with a little touch of something extra……
IRISH CREAM!
Yes!  

Adding a small amount of Irish Cream to a box cake mix gives it a little different flavor.  And, I also added a little Irish Cream to the store-bought cream cheese frosting.

Just add a splash… or a 1/4 cup to suit your taste.

Irish cream is a sweet and creamy liqueur that has an Irish whiskey base.  (YES, these do contain alcohol.  So, I like to refer to them as an ‘adult dessert’.)  Irish cream is typically served on its own, in mixed drinks or coffee.
There are several popular brands such as: Baileys, Carolans, Saint Brendans.  For this recipe I used Aldi’s brand, Connellys

I think I could change this blog to a “Chocoholic” website.  It seems I’m always posting chocolate recipes.  I’m addicted.
I’m not a huge dessert fan, but when I do eat sweets, chocolate is the way to go.

These are the perfect size.  Just right for a little treat without blowing all your calories.  But I’ll admit I did eat more than one….they’re SO good.

Strawberry Cake with Chocolate Cream Cheese Frosting

What more says Happy Valentines than CHOCOLATE?

It seems every dessert I post includes some form of chocolate.  Who doesn’t love chocolate?  If you are one of those people, we can’t be friends :).

This layered Strawberry Cake with Chocolate Cream Cheese Frosting has a layer of fresh strawberries between two strawberry cake layers.
So…. it’s OK to eat chocolate when it includes berries!

This recipe uses a boxed cake mix which makes it quicker to put together.  And, I actually thought the cake mix was great- and a great shortcut.  Making your own Chocolate Cream Cheese frosting takes the cake over the top and makes it taste more ‘homemade’,  with less time involved.

Chocolate Covered Bourbon Strawberries

Perfect, quick dessert that makes a nice presentation. Strawberries soaked in Bourbon, dipped in chocolate and then rolled in nuts!

Strawberries soaked in bourbon then covered in chocolate….what more do I need to say?

These are perfect for Valentines, a holiday or just any day of the week!

They are SO easy to make.  But it looks like you spent a lot more time than you actually did!

I like to make these for birthdays or when we are having guests for dinner and don’t want to spend a lot of time on dessert.

Apple Pumpkin Cake with Chocolate Drizzle

Warm comforting cake with apples, pumpkin, dark chocolate and pecans. You can’t go wrong with this combination!

An EASY Bundt cake that is so moist and delicious!

This is the perfect Fall or Holiday cake.  It is super moist.  And it uses less oil by adding a can of pumpkin puree.  So….it’s ‘more’ healthy, right.  Oh, the things we tell ourselves to justify eating dessert.

You can use any kind of apples for this Apple Pumpkin Cake.  I used a combination of Honeycrisp and Pazazz apples.

I’m always using my Bundt pan to make cakes.  It’s just so easy.  No layer, no using multiple pans and it makes a pretty cake.  There are a lot of different Bundt pans you can purchase and you can find some really cool designs that change the appearance of the cake.
I only use mine for desserts but there is a lot of savory dishes that can be cooked in a Bundt pan also.
