This is a great recipe to make with your end-of-season tomatoes and basil!
It’s quite simple and delicious as a topper for some homemade french bread or store bought baguettes.
I used a mixture of red and yellow tomatoes. I think heirloom tomatoes would be wonderful in this recipe but we didn’t plant any this year.
Bruschetta Recipe
Fresh tomatoes, basil, and garlic mixed with olive oil and balsalmic vinegar
Servings: 4
Ingredients
- 3 large tomatoes
- 10 leaves fresh basil, chopped
- 3 cloves fresh garlic, chopped
- 1/4 cup red onion, chopped
- 1-2 tbs olive oil
- balsamic vinegar, to taste
- salt and pepper, to taste
Instructions
- Chop the tomatoes, basil, garlic and red onion.
- Add olive oil and balsamic vinegar.
- Stir well and add salt and pepper to your taste.
If you want your Bruschetta to have less liquid from the tomatoes, just drain the tomato juice before you add the balsamic and olive oil
Serve on slice french bread or baguettes. You can toast your bread if you like. We’ve tried it toasted and we like it both ways. There is several choices of bread that this Bruschetta Recipe will go well with:
