It’s time to grill!

I love being able to hand off the cooking to my husband.  He does all the grilling in our house – I stay away from the grill.  I’m usually still in charge of the prep work but he does the cooking.  And the cleanup is so much simpler than dirtying up 2-3 pans  in the kitchen.  Most of the time when we light the grill, we grill the entire meal.  Or we grill extra meat to use for another meal later in the week.
This Cilantro Grilled Chicken is perfect for a lunch meal sliced on a salad.

This recipe for Cilantro Chicken is a different twist on grilled chicken using bottled BBQ sauce or bottled marinade.

This shrimp and grits recipe is filling and quick to cook – 5 minutes!

Grits are not just for breakfast.  They can be used in savory dishes also.  In fact I prefer them for a dinner meal instead of a breakfast meal.

“Grits are a Southern dish”, you say.  I’m about as Southern as you can get and we didn’t eat grits growing up.  Not sure why.  In fact I only ate grits for the first time at a restaurant a few years ago when I ordered a dish similar to this recipe- minus the sauteed spinach. We often eat this sauteed spinach as a side dish with our dinner meal.  It’s quick, easy and a ‘super food’.  I don’t know about y’all but I’ll take all the super foods I can get! This is a healthier whole grain pasta dish.  And, many of you have most of these items in your pantry and freezer.

We normally have a pasta dish one night a week.  I like switching it up and trying different combinations.  This recipe uses ground turkey and Italian turkey sausages and whole grain penne rigate.

Since we love pasta SO much, I can eat this dish and not feel entirely guilty.

When I make meatloaf I almost always use ground turkey.  Yes, we like ground beef but also like cutting a few calories here and there and we also usually try and limit our red meat.
