UPDATE:  The last time I made this Golden Milk Paste,  I turned the heat off, left the saucepan on the hot burner and then added the coconut oil.  It was a little easier to incorporate the coconut oil into the paste mixture.

This magic mixture has really helped me!

And you can drink it at bedtime to help with sleep.

Back in October of last year, I did something silly and was not exactly acting my age.  Fun, but paid the price when I heard something pop in my hip (or was it my leg, or my back??).  I tried to act as if I was OK and go on as normal since we were on vacation in Mexico.  BUT the next morning when I could hardly walk to breakfast was when I realized I had done some damage.

I was hardly prepared for how much damage I had actually done.  It didn’t get better upon our return home, only worse.
So, long story short, 10 months later and 3 months of physical therapy, I will admit surgery has entered my mind.  I’ve had an MRI which showed nothing significant….but the pain has been significant!  It’s really haltered my life – or I should say OUR lives.  We’ve canceled several things and done a lot of things differently since October due to my inability to enjoy things I was enjoying prior to.

Enjoying Illinois’ Wineries

Southern Illinois’ Wineries -sampling some wines and taking in the scenery!

Believe it or not there are many wineries in Illinois with some very nice wines to be tasted and enjoyed.  A lot of the wineries have nearby shops, parks, bike trails and hiking to also be explored.  And, as an added bonus, some wonderful scenery!

We’ve always enjoyed taking a day trip or a weekend outing to explore our local wineries.  We have several within close distance and can be sitting down with a glass of wine within 20 minutes.  We like the atmosphere and it slows us down from hectic schedules and honey-do-lists and chores around the house.
We have a nice setting to enjoy a glass in our backyard but sometimes find it hard to relax – instead start looking around and seeing something that needs to be done!

Kitchen Update – Phase III

Our Kitchen Update makes the kitchen look larger and brighter and adds more functionality.

(This is a three part post.  Read Phase I and Phase II here!)

I’m In Love!

We have finished the kitchen update!  And it has turned out great.  I just keep walking in our kitchen and asking myself, “Is this really the same kitchen?”.

We’ve redone/remodeled almost every aspect of our house over the past 15 years.  I’m very aware of how much PAINT can do.  You can transform a room with a gallon of paint.

I knew when we started this project, with our main focus on having the cabinets painted, that it would be a huge change in appearance to the room.  But I was unprepared for just how much of a change – Not only to the kitchen but the entire downstairs of our house.  Our floor plan is very open and you can see the kitchen from every room but the bathroom.

Kitchen Update – Phase II

See Kitchen Update – Phase I here!

We’re in the process of having our kitchen cabinets painted.  Everything is going along well and the expected timeline for completion of the painting is around 1 week.  So Exciting!!

We considered painting the cabinets ourselves but felt like it might be a little over-whelming.  The thought even crossed my mind that we would start the project and realize that we could not or did not want to finish it.  Then what?

So, we hired White Pineapple Cabinet Painting, a local painting company to do the work for us.  (As mentioned in my last post- we are using our vacation funds since vacation got cancelled this year.  Thanks Covid.)  White Pineapple has been great to work with and the owner, Denise, and her all female team has been very responsive and helpful.  You can also check out their Facebook Page and see before and after photos, including our kitchen cabinets!

Kitchen Update – Phase I

Updating a 34 year old kitchen with new paint, an enlarged island with Quartz countertop and installing new lighting.

For awhile now I’ve wanted an update in the kitchen – new cabinets or existing cabinets painted.  We’ve lived here for 15 years (where did the time go?) and the time has come!

The cabinets are getting painted!!

We have classic oak cabinets.  I’m sure when they were installed they were great (and some would say they still are).  The cabinets are very sturdy and solid.  But…the oak stain was no longer working in our house.

We’ve updated every room in some way or another.  The kitchen was partially updated in 2010.  We had granite countertops installed and Paul installed a backsplash.  But we never did go forward with changing the cabinets.

This sugar free dessert taste so good, you won’t realize you are eating a
sugar free dessert.

We had family visit a few days ago and this dessert was easy to put together before they got here.  It keeps well in the refrigerator for a few days.

My step-father is diabetic and has always stuck to his diet since he was diagnosed years ago.  So when he visits I always try and have a sugar free dessert for him to indulge in.  Since this recipe doesn’t taste like you are eating a sugar free dessert, this is the only dessert I made.  My great nephew and niece were here also and this is definitely a kid-friendly dessert as well.  We all enjoyed it!
