So we stood there in the sweltering heat and watched for a few minutes, keeping our distance and ready to take off running should we need to.  We never saw it move, not one little bit.

One day when I was about five years old I realized something I never thought possible. I’d never seen my grandmother spank or even scold any of her grandchildren.  We quickly learned that our dear little grandmother could and would, without any hesitation, deliver justice as she saw fit.

The Lost Wallet

He slowly revealed the package with a huge smile on his face – a ziploc bag containing his slightly moldy and damp wallet having spent the tough Illinois winter outside.  The sticky note attached simply read, “We found this while walking near the United Township soccer fields in East Moline, Illinois.”  No name, no return address.

In something less than two months, we find ourselves, our families, our communities, our nation and even the world in uncharted territory.

In that short amount of time we have been thrown into something so foreign to us that we are all having a lot of difficulty coping. We are in self quarantine, practicing social distancing – probably the catch phrase of the century,  wearing face protection, intentionally crossing the street to avoid oncoming neighbors and even dear friends and adjusting to so many more things we never imagined. It’s time to grill!

I love being able to hand off the cooking to my husband.  He does all the grilling in our house – I stay away from the grill.  I’m usually still in charge of the prep work but he does the cooking.  And the cleanup is so much simpler than dirtying up 2-3 pans  in the kitchen.  Most of the time when we light the grill, we grill the entire meal.  Or we grill extra meat to use for another meal later in the week.
This Cilantro Grilled Chicken is perfect for a lunch meal sliced on a salad.

Grits are not just for breakfast.  They can be used in savory dishes also.  In fact I prefer them for a dinner meal instead of a breakfast meal.

“Grits are a Southern dish”, you say.  I’m about as Southern as you can get and we didn’t eat grits growing up.  Not sure why.  In fact I only ate grits for the first time at a restaurant a few years ago when I ordered a dish similar to this recipe- minus the sauteed spinach. We often eat this sauteed spinach as a side dish with our dinner meal.  It’s quick, easy and a ‘super food’.  I don’t know about y’all but I’ll take all the super foods I can get!
