It’s time to grill!

I love being able to hand off the cooking to my husband.  He does all the grilling in our house – I stay away from the grill.  I’m usually still in charge of the prep work but he does the cooking.  And the cleanup is so much simpler than dirtying up 2-3 pans  in the kitchen.  Most of the time when we light the grill, we grill the entire meal.  Or we grill extra meat to use for another meal later in the week.
This Cilantro Grilled Chicken is perfect for a lunch meal sliced on a salad.

This recipe for Cilantro Chicken is a different twist on grilled chicken using bottled BBQ sauce or bottled marinade.

Some people have a love/hate relationship with cilantro.  We fall into the ‘love’ category.  I always have fresh cilantro on hand and therefore look for a new use for it, besides using it for salsa (which is the first use that usually comes to mind for most).

In my opinion cilantro is an herb that is definitely not worth trying to grow at home.  I love having fresh herbs growing during the spring/summer.  It’s so nice to step outside and pick what you need and add to your dishes.  But, cilantro is fairly hard to grow- It doesn’t like hot weather and I’ve never had success with it.
AND, it is really inexpensive to purchase a bunch from the grocery.

Cilantro Grilled Chicken

Marinate boneless chicken breasts in olive oil, fresh cilantro, fresh garlic and lime juice.

Ingredients

  • 2 chicken breasts, boneless and skinless
  • 3-4 tbs fresh cilantro, finely chopped
  • 3-4 cloves fresh garlic, finely chopped
  • 1 tsp olive oil
  • salt and pepper, to taste
  • 1 lime, juiced

Instructions

  • Place chicken in a ziplock bag and add all ingredients except for lime juice.
  • Let marinate for 3-4 hours, if possible.
  • Add lime juice.
  • Preheat grill to medium to high heat. Cook chicken 15-20 minutes, turning until cooked thru and no longer pink.

 

This chicken is great served straight off the grill with a side dish or two.  Or try these other serving options:

as a sandwich on a bun
chop it up and put it on a salad
or slice it and use it in a wrap
