This delicious and easy pasta recipe
is a healthy weeknight meal
loaded with mushrooms, broccoli, spinach and tomatoes!
Use any pasta you have on hand. I used Casarecce pasta, which is short twists of pasta, which appears rolled inward making them resemble a scroll.
I like trying and experimenting with different pastas – it changes your dish even when you’ve used the same ingredients and makes it appear as a new pasta dish.
Just make sure to cook the pasta as directed on the box. You always want to slightly under-cook or cook to al dente, especially if you are adding it to a one pot meal – as it will continue to cook once added in a warm sauce or tossed with warm vegetables.
This recipe reheats well, just make sure you add a little water before reheating, as the pasta will have soaked up the liquid.
Easy Pasta with Italian Sausage and Vegetables
Ingredients
- 8 oz Pasta (I used Casarecce)
- 4 links Spicy Italian sausage, casings removed
- 1 small Onion, diced
- 4-5 cloves Garlic, finely minced
- 8-10 Button mushrooms, sliced
- 1 small Bunch of broccoli, chopped
- 2 handfuls Spinach
- 2 small Roma tomatoes, diced
- 1 cup Pasta water
Instructions
- In a large saucepan, cook pasta according to directions on package. Before draining, save 1 cup of pasta water and set aside
- In a large saute pan, cook Italian sausages (if you are using sausage links, crumble and break them up as you're cooking). Add onions and garlic and stir well.
- Add mushrooms and broccoli and cook until the vegetables are getting tender.
- Add spinach and tomatoes pouring the hot pasta water over the top to slightly wilt the spinach and tomatoes. Stir in the al dente pasta and serve immediately.
- Add any spices, salt and pepper to your taste. Top the dish with Parmesan and crushed red pepper.
Although this dish has a lot of flavor without adding a sauce or seasonings you can always add seasoning, salt and pepper to your taste.
I suggest Dash Italian Medley Seasoning Blend. This seasoning adds a lot of flavor without added salt or MSG.
