This is a simple recipe for a simple breakfast but packed with healthy ingredients for a great tasting and filling breakfast.
These overnight oats are mixed up the night before and placed in the frig overnight. Then the next morning you have a quick, nutritious breakfast ready and waiting. You could make them the same morning that you plan to eat them but they would need to sit for 1-2 hours so that the flavors can meld. Also since you will be using Old Fashioned oats, they will need to soften up a bit.
We’ve starting using Soy Milk for our overnight oats but we have used Almond Milk, original flavor or vanilla (which works great) and skim or 2% milk.
There are many variations to this recipe. I’ve tried probably a dozen. So feel free to play around with the recipe and change it up and make them your own. Here are a few ingredient ideas to add in as you are making them the night before.
ADD-INS:
- Protein powder
- Chia Seeds
- Flax Seeds
- Maple Syrup
- Greek Yogurt
- Cocoa Powder
- Any Flavor of Preserves or Jelly
- Peanut Butter
When serving the next morning, you can add your toppings. Pretty much anything you like. Paul likes chopped walnuts and I like fresh berries.

- Nuts
- Any Fresh, Frozen or Dried Fruit
- Honey
- Coconut Flakes
- Chocolate Chips
These oats can be eaten cold, which is what we prefer. But they can also be heated in the microwave if you prefer.
Soy Milk Overnight Oats Recipe
This recipe serves 2.
1 banana
1/2 cup rolled old fashioned oats
1/2 cup organic Soy Milk original or vanilla (can use any milk you prefer)
cinnamon, to taste
Mash banana well in a small bowl.
Add milk, oats and cinnamon and stir until blended.
Mix in any extra add-ins.
Divide into two bowls. (I like to use a glass bowl with a plastic lid.)
Place in frig overnight.
Top with toppings of your choice.
