Chocolate Cowboy Cookies

A dark chocolate cookie loaded with chocolate chips, oats, coconut flakes and nuts!

Ingredients

  • 1 1/2 stick Butter, softened
  • 3/4 cup Brown sugar
  • 1/2 cup Sugar
  • 1 large Egg, plus 1 egg yolk
  • 1 tsp Vanilla
  • 1 1/2 cup All purpose flour
  • 1 1/2 tsp Baking powder
  • 1 1/2 tsp Baking soda
  • 1/4 tsp Salt
  • 1 1/2 tsp Ground cinnamon
  • 1 1/2 cup Dark chocolate chips
  • 1 1/2 cup Old fashioned rolled oats
  • 1 cup Unsweetened shredded coconut flakes
  • 1 cup Nuts, chopped (I've used either walnuts or pecans)

Instructions

  • Heat oven to 350 degrees.
  • In a stand mixer, mix butter on medium speed until smooth and creamy. Add in the sugars and mix well for 2 minutes, scraping down the sides of the bowl if necessary.
  • Add the egg and egg yolk and beat well.
  • Beat in the vanilla.
  • In a separate bowl, sift the flour, baking powder, baking soda, cinnamon and dark cocoa (or use regular cocoa if you prefer) together.
  • Slowly add the flour mixture to the butter mixture and mix until just combined.
  • Stir in the chocolate chips, oats, coconut and nuts.
  • Scoop out the cookie dough (I used a small melon ball) and place on a baking sheet that has been sprayed with cooking spray. Or use parchment paper.
  • Bake in the oven for 12-15 minutes, until edges are lightly browned. Keep a close watch on them as not to overcook. They will continue to cook on the cookie sheet as they cool. Remove and store in a sealed container on the counter-top.
  • Recipe makes 48 small to medium sized cookies.
