Dark Chocolate Trail Mix Bites

These little chocolate bites are a bit of heaven – dark chocolate, dried fruits, nuts and seeds.  They are the perfect bite when you need just a little something sweet.

This would be a great recipe to get the kids involved in.  Let them create their very own Chocolate Bites.  Just do all the chopping and melting of the chocolate and let them place the dried fruit and nuts on them!

There are SO many combinations to try when making these.

I used dried cranberries and blueberries.  But I love dried apricots and the apricots give them a little more splash of color.  But really you can choose what ingredients suits your taste and what you have available in your kitchen.

They are really pretty also.  I think they would make a nice gift for a dark chocolate-loving friend or relative!
You could be creative and package them in a cellophane package with a cute ribbon.

First off, have all your ingredients prepped before you start melting the chocolate.  It makes it easier to make them all at once before the chocolate starts hardening.

So gather everything you’d like to use.  Place it on a chopping board.  I think you will find that you will want to chop the larger nuts.  These bites are small and you don’t want to overpower them with large chunks.  And, if you chop your ingredients, you can get more nuts and fruit on the chocolate bite!

For my Dark Chocolate Trail Mix Bites I used:

NUTS -cashews, pecans, walnuts, almonds, peanuts
DRIED FRUIT -cranberries, blueberries, coconut
SEEDS -flax, sunflower
(….and I sprinkled a little course ground sea salt on a few)

Place the dark chocolate chips in a microwave safe bowl and microwave on high in 15-20 second increments.  Stir after each 20 seconds.  Mine took about 1 minute and 20 seconds to completely melt.

Place wax or parchment paper on a baking sheet and with a teaspoon drop a small amount of chocolate onto paper.  Taking the back of the spoon, spread the chocolate into a small, round medallion shape.  I did about 12-14 at a time, then placed the nuts and fruit and then repeat the process.

Place in frig for an hour or so and let completely harden.  They will be very thin and you can easily pop them off the paper.  Store in a plastic bag or a sealed bowl.  They will easily keep in the frig for a week…..but I guarantee they won’t last that long!

This is a popular French dessert named Mendiants.  But you can call them what you like: chocolate medallions, chocolate rounds, chocolate bites, energy bites, or chocolate trail mix bites as I named mine.

Ingredients

  • 8-10 oz Dark Chocolate Chips
  • various nuts, seeds and dried fruit (I used, cashews, pecans, walnuts, almonds, peanuts, dried cranberry, dried blueberry, dried coconut, flax and sunflowers kernels. Feel free to use a pre-packaged trail mix.)
  • course ground sea salt

Instructions

  • Prep all your toppings, chopping the larger nuts and fruit if necessary. You don't want the pieces too large because these chocolate bites are small (about the size of a half dollar coin). Lay all toppings out on a cutting board and have them handy to grab.
  • Place chocolate chips in a microwave safe bowl, microwave on high for 15-20 second increments, stirring in between microwaving until fully melted and smooth.
  • With a teaspoon, place a small amount of chocolate on a baking sheet lined with wax or parchment paper. Take the back of the spoon and spread into a thin layer. Place fruit and nuts on top (in any combination you like).
  • Place in refrigerator for approximately one hour and let harden.
  • Can be stored in refrigerator in a plastic bag or sealed dish for up to one week.

You could easily use a bag of store-bought trail mix and save even more time.

These are perfect with a cup of coffee during the day or as an after dinner treat with a glass of red wine!
