TWO INGREDIENTS!
Quick, simple and portion-controlled.
This Chocolate Pumpkin Mini Muffins are so EASY. Two ingredients:
- 1 box Dark Chocolate Cake Mix
- 1 can Pumpkin (100% pumpkin. Not pumpkin pie filling)
For all the pumpkin lovers out there, this is the perfect Fall dessert. They are so moist and flavorful and make a great afternoon snack or for breakfast with a cup of coffee.
These are the perfect little snack to satisfy your sweet cravings.
I was able to make 40 muffins, so having 2 mini muffins is a treat but you don’t have the guilt.
Dark Chocolate Pumpkin Mini Muffins
Ingredients
- 1 box Dark Chocolate Fudge Cake Mix
- 1 15 oz Pumpkin (I used Libby's 100% pure, organic)
Instructions
- Preheat oven to 350 degrees.
- With a mixer, mix the TWO ingredients - cake mix and pumpkin on low to medium speed for about 2 minutes.
- *Do not add the ingredients suggested on the cake mix box.*
- Spray 2 mini muffin pans with cooking spray.
- Using a melon baller, fill the mini muffin pans about 3/4 full. I made 36 mini muffins. I sprinkled 3-4 dark chocolate chips on half of mine.
- Bake at 350 degrees for 12-15 minutes, checking with an inserted toothpick to make sure you don't overcook them.
I sprinkled 3-4 dark chocolate chips on half of mine before baking. Or you could mix the chocolate chips into the batter before baking.
I invested in some nice mini muffin pans and I like making different flavors. You can change this pumpkin muffin up a little and use a Spice Cake mix. Or use a sugar free Chocolate Cake mix.
And, a melon baller makes this so much easier to fill the pans! It’s the perfect size.This is a great fall dish for all the pumpkin lovers. And it’s low calorie for us folks that have put on a few pounds from stay-at-home-Covid-weight!
